Development and evaluation of a resource manual providing for special needs of children in school lunch

The purpose of this study was the development of a manual that described the basic nutritional regimen for children with chronic illnesses and developmental disabilities. Results of a survey that was designed to ascertain the types of dietary needs prevalent in school districts throughout the southwest region were the basis for the development of a manual titled, Nutrition Concerns of School Lunch Programs: A Sourcebook. The manual discussed the nutritional regimen for specific chronic illnesses and developmental disabilities. Thirty-seven individuals with expertise in feeding children with chronic illnesses or developmental disabilities and individuals concerned with feeding children in school food service programs evaluated the manual for content, readability, and format. All reviewers commented favorably on the manual and timeliness of information for individuals responsible for feeding children with special dietary needs.
