Banerjee, Santa | Pal, B.
To aid in the nutritional analysis of the Indian diet, the zinc content of 122 foods typical of the Calcutta region was estimated by the dithizone spectrophotometric method. Zinc content was highest in the meat and poultry product group, followed by pulses and legumes, cereals, root crops, leafy vegetables, garden produce, nuts, fruits and condiments. Drinking water contained 13.1 ppm of zinc. In developing countries such as India, the zinc content of cereal, roots and leafy vegetables (especially spinach) may be of greater significance than the animal sources of zinc.
