A study established non-linear sweetness/concentration ratios for fructose and 3 artificial sweeteners (saccharin, aspartame, and Acesulfame K) vs. sucrose in an acidified, noncarbonated mineral water medium, using paired comparison tests. Sweetness additivity was shown for each of the artificial sweeteners when used in binary mixtures with fructose. Sensory task results indicated that low-calorie soft drinks containing fructose with as low as 2-3% sugar content were indistinguishable from traditional sucrose soft drinks. (wz)
