A new model for a laboratory scale continuous steep system was designed and constructed based on previous work done at the University of Illinois. The system can be used as a tool for studying continuous countercurrent steeping performed in the corn wet-milling industry, and for developing new steeping techniques. The system consists of 16 glass tanks (2.5 L each) each holding up to 1 kg of corn and associated steepwater. The system is controlled by Allen-Bradley SLC504 modular controllers and interfaced with a personal computer. The sequencing of steepwater flow through the tanks is controlled by a computer program constructed using the Advanced Programming Software. Control View Runtime software provides the detailed working of the system on a computer monitor. This study presents the design and preliminary evaluation of the performance of the system. Steepwater profiles of pH, sulfur dioxide (SO2) concentration, total acidity and total solids content, and the product yields of steeped corn were studied and compared to data from the literature.
