Pentosan and beta-glucan content of Finnish winter rye varieties as compared with rye of six other countries

Pentosan and beta-glucan contents of five winter rye varieties were studied at three locations during two years in Finland. The values were compared to values obtained from imported rye samples from Canada, the Federal Republic of Germany, Hungary, Sweden, the U.S.A. and the U.S.S.R. The average pentosan content for different trials (three sites, two years) varied from 9.2 to 11.5% and beta-glucan content from 1.2 to 1.6%. The pentosan content of imported rye samples varied from 6.5 to 8.8% and beta-glucan content from 10 to 2.0%. No significant differences were found in either pentosan or beta-glucan contents between different varieties. However, pentosan content correlated highly negatively with thousand grain weight (r = -0.970; P < 0.01) in the variety material (n = 5). As to the whole sample material (n = 23) in which environmental factors had an effect, pentosan content correlated positively with growing time (r = 0.641; P < 0.001) and protein content (r = 0.481; P < 0.05) and negatively with Falling Number (r = 0.722; P < 0.001). In the whole sample material beta-glucan content had a positive correlation with grain yield (r = 0.746; P < 0.0001) and negative correlation with growing time (r = -0.0445; P < 0.05). Pentosan content was partly dependent on environmental factors: it correlated positively with the amount of precipitation (r = 0.744; P < 0.001) and negatively with temperature (r = -0.715; P < 0.001).
