A comprehensive review discusses the nutritional significance of zinc (Zn) and various aspects affecting its absorption and malabsorption. Specific attention is focused on research findings in 3 areas: experimental methods for assessing the efficiency of Zn uptake in animals and humans; normal intestinal mechanisms involved in Zn absorption; and intrinsic and extrinsic dietary factors influencing Zn bioavailability. Disease states that affect Zn uptake and therapeutic considerations concerning drug and nutrient interactions and Zn toxicity also are discussed.(wz)
