Protein quality and the cost of selected commercial protein supplements

The protein efficiency ratio and cost of a commercial soy protein supplement, a commercial high-protein mixture supplement, nonfat dry milk, and a casein control were evaluated in experimental diets. Six rats were randomly assigned to each diet; body weights and feed intakes were recorded twice weekly. Metabolic studies were done for 4 days during the second week of the 4-week trial. It was found that nitrogen balance was positive for all protein diets, but was lowest for the low-fat soy powder. The protein efficiency ratio of nonfat dry milk was equal to casein, but both the soy powder and high-protein supplements were significantly lower. The low-fat soy powder was the least expensive per gram of protein, with nonfat milk only slightly higher.
