A review of the relationship of wheat proteins to celiac disease focuses on tissue changes in the small intestine when wheat is ingested, the role of gliadin proteins, three hypotheses concerning disease mechanisms, and the possibility of a nontoxic bread. Celiac disease is characterized by malabsorption of nutrients as a consequence of damage to the absorptive epithelial cells of the small intestine. The role of gluten proteins in dermatitis herpetiformis and schizophrenia is also mentioned.
