School lunch: the case for low-fat, high-fiber meals

A brief report argues the importance of school lunches for providing low-fat, high-fiber meals, and notes the observation that some schools are providing fast food type meals rather than more nutritiously-based meals. It is argued that children cannot be urged to eat low-fat, low-salt, and low-sugar foods in the classroom or at home and then be given hot dogs and fatty chicken nuggets in the school cafeteria. Examples of schools providing nutritionally unwholesome and nutritionally wholesome meals are described. A Minnesota program emphasizing ca. a dozen ways to reduce salt, sugar, and fat to reduce potential heart disease risk is cited. Data illustrating that some school lunches are nutritionally worse than their fast food equivalents are included.(wz)
