Sequential changes in plasma lipoproteins and body fat composition during polyunsaturated fat feeding in man

A polyunsaturated fat diet fed to 5 healthy women for 35 days changed the fatty acid content of adipose tissue and composition of the major plasma (circulation) lipoprotein fractions within 14 and 7 days respectively, of dietary treatment. Following calculation of the mean daily energy consumption of each subject in terms of protein, carbohydrate and fats, a diet of higher polyunsaturated fat content was prepared by substituting safflower oil for saturated fat, without changing the percentage of energy from each nutrient source. Since this dietary manipulation affected both the fatty acid saturation and chemical composition of the lipoproteins, increased lipoprotein fluidity should result. Thus, the moderately polyunsaturated fat diet may be effective in changing lipoprotein metabolism.
