The beer industry has told the FDA that 80% of beer produced after November, 1979, will contain substantially lowered amounts of nitrosamines, purported to cause cancer. All beer distributed after January, 1980, will be effectively free of nitrosamines. The FDA will begin checking nitrosamine content after January 1, 1980. Nitrosamines in beer can largely be prevented by using indirect firing to prevent malt from coming into direct contact with combustion products of the heat source. 5 ppb of dimethyl nitrosamine levels in beer can be reliably measured, according to the FDA.
