Zinc content of fats and oils

Major dietary sources of zinc in developed countries come from animal products. In developing countries, studies indicate pulse-legume groups contribute to the zinc requirement. Fats and oils were analyzed to determine zinc content. Vegetable oils appear to be better sources of zinc than butter fats; values were lowest in hydrogenated vegetable fats. Fat intake did not appear to contribute substantially towards dietary zinc requirements. (kbc)
