Blacks and Hispanics in low income areas such as Bedford-Stuyvesant have a particularly difficult time meeting the dietary needs of their families. Food is over-priced in these areas, and lack of transportation prevents most people from shopping for food elsewhere. Food habits are closely related to tradition and ethnic backgrounds. Recent surveys comparing the food habits of these ethnic groups showed few differences in their problems and buying patterns. Both considered budgeting the main concern. Planning, shopping, and storing food were common sources of complaints. Both groups tended to fry or boil food much more frequently than broiling or baking. Frying and boiling are the most nutritively destructive cooking techniques.
