Thinking about nutrition education: What to teach, how to teach it, and what to measure

The decade of the 70's has been characterized by the public's increasing interest in nutrition information and the relationship between diet and health. The food industry, government and educational organizations have responded with a flood of nutrition education materials. Educators must decide which materials to use, how to use them effectively, and what measurements are needed for evaluation. Nutrition education objectives must reflect changes in consumption patterns and consumers' attitudes about food. Goals such as "intelligent food choices" and "healthful dietary practices" must be interpreted in the context of today's health problems and the current food supply. Only then can relevant content and methodology be developed. All educational approaches should be based on underlying values and assumptions; the nutrition education content of past decades is therefore no longer useful for making food choices in the 1980's. These issues emphasize that educators must think carefully about the purpose and direction of nutrition education for the next decade.
