The aim of the study was to investigate the importance of individual apple fruit characteristics for DCA-CF (Dynamic Controlled Atmosphere) storage on the variety ‘Elstar, PCP’. The fruit characteristics which had been examined were surface colour, harvest date, fruit load (fruit number/tree) and fruit size. In the storage practice is observed more often that fruits of the same variety behave differently with regard to the tendency to fermentation at the same oxygen concentration. Some fruits are already in the fermentation process, while some of the apples have not yet fermented. The cause of this different behaviour is unknown. For the present work, the fermentation behaviour was investigated on single fruits. The oxygen limit was recorded by measurements of the minimal fluorescence (F0) and the oxygen concentration in the storage. Furthermore, the fermentation behaviour was described by the analysis of the fruit’s own ethanol concentration. The results show that both the harvest date and the fruit load can influence the fermentation behaviour of ‘Elstar, PCP’.
