The effects of phytate on nitrogen utilization and zinc metabolism in young rats

Phytic acid was removed from rapeseed protein and used in a dietary preparation for young rats to investigate the effects on nitrogen utilization and zinc metabolism. Various biological parameters, such as protein digestibility, rate of growth, efficiency of protein utilization and zinc metabolism, were analyzed. It was found that the biological value of the phytate-free protein was equivalent to that of casein, although digestibility and utilization were somewhat lower. Growth performance of rats fed varying amounts of phytic acid was inversely related to the amount of phytic acid in the diet. Serum and femur zinc concentrations were found to decrease dramatically as phytic acid increased, thus illustrating the need to relate zinc requirements to phytic acid content of the diet.
