Moderate amounts of lean red meat, poultry and fish can be included in a low-fat diet plan to lower blood cholesterol levels. The dietary recommendations to substitute poultry and fish for meat (beef, pork, lamb) may not be warranted or necessary, because blood lipid profiles have not been shown to improve on making this substitution for periods as long as three months. Individuals who need to lower their blood cholesterol level will benefit from including lean meat in their diet daily. Meat is valued as a source of high-quality protein, vitamins and important minerals, including zinc and iron. Women who regularly consume red meat have a superior iron status compared with those who rarely or never eat red meat.
