A major overview delineates the consumption trends, types, and characteristics of sweeteners, alternatives to cane and beet sugar, and applications of polydextrose. Consumption trends are detailed for cane and beet sugar, high fructose corn sweetener, and artificial sweeteners over the period from 1920 to 1986. Information is provided on the types of nutritive sweeteners, functional properties of sucrose, and the relative sweetness of nutritive sweeteners. The physical and chemical characteristics, stability, behavior, and use of nutritive (corn sweeteners, xylitol, aspartame) and non-nutritive sweeteners (saccharin, cyclamates, acesulfame K), plant extractives as sweeteners (thaumatin, monellin, stevioside, glycyrrhizin, phyllodulcin), and newly developed sweeteners (hernandulcin, neosugar, miraculin) are described.
