Yields and nutrient content of selected fresh fruits

A study evaluated the nutrient contents of 6 fruits (cantalope, cherries, grapes, nectarines, plums, watermelon) obtained from 6 major market areas in the U.S. during early and late stages of the growing season. Data on proximate composition (moisture, protein, ash, fat), edible yields, and on the content of 5 vitamins (A, C, B6, and folic and pantothenic acids) and 9 minerals (Ca, P, Mg, Na, K, Fe, Zn, Cu, and Mn) are presented and discussed. Cantaloupe had the lowest edible yield (about 55%) while grapes had the highest (about 97%). (wz)
