Classification of olive trees according to fruit and oil characterisation

This study has focused on 40 cultivars coming from olive seeds obtained by free crossbreeding. It deals with pomologic characteristics of olives (fruit average weight FAW, pulp/stone ratio P/S, oil content per fruit OCF and oil yield OY), and the acids composition of the extracted oils, particularly the contents in palmitic acid C16:0, palmitoleic acid C16:1, stearic acid C18:0, oleic acid C18:1, linoleic acid C18:2 and linolenic acid C18:3 during the crop year 1998-1999. The aim is to identify the cultivars exhibiting better characteristics than the Chemlali variety which represents the majority of olive oil trees in Tunisia, but it has a major problem of coagulation at low temperature and a content in linoleic acid, generally higher than the International Olive Oil norms. Obtained results reveal that seven out the 40 cultivars studied have similar pomologic characteristics and the best acid composition compared to the Chemlali. These are A11, A13, A31, A25, A27, A37 and A39.
