School food service aids state's disaster victims

The California School Food Service Association conducted a survey of school food service directors on their efforts in disaster relief. The survey questionnaire provided information on the type of disaster, its duration, the amount of advance notice given school food service, the number of meals served, and the kinds of foods prepared. A major challenge faced by school food service directors in handling disaster emergencies is adapting menus to donations from local restaurants and food merchants in a very short period of time. Food service directors commented on what they had learned from evaluating their personal experiences with disaster relief, and suggested changes they might make in handling future situations. Overall, food service personnel consider their disaster relief efforts exhausting, but extremely rewarding.(aje)
