Inhibition of carcinogenesis by minor anutrient constituents of the diet

This paper considers two major groups of non-nutrient dietary constituents that inhibit carcinogenesis: blocking agents and suppressing agents. The inhibitory compounds that are reviewed include: aromatic isothiocynates found in cruciferous vegetables, monoterpenes present in citrus fruits and caraway-seed oil and organosulphur compounds occurring in Allium species. Blocking by inhibition of carcinogen activation and by carcinogen detoxification are examined. An interim classification scheme of foods in terms of their potential impact on risk of neoplasia is provided.
