Conductometric Studies of Sugar Solution: An Additional Parameter to Assess Sugar Quality

Assessment of sugar quality is important for its marketability mainly based on its colour value. Conventionally it is carried out by way of International Commission for Uniform Methods of Sugar Analysis (ICUMSA) colour value in solution phase, whereas, in India it is done in solid phase. The ICUMSA could not establish a uniform method for colour determination with respect to pH parameter. The present study is an attempt to emphasis on parameters viz. pH and concentration. Apart from these parameters, conductivity has a direct bearing on the quality of sugars. An alternative option has been proposed in the present study using conductivity method by taking 5% sugar solution. The observation reveals that total ionic impurities present in sugar is equally better responding than the sugar part tested by conventional methods. For colour aspect in terms of effective non sugar in solution phase has been discussed in the present study.
