Fatty acid composition of prepared infant formulas

The fatty acid composition of 20 infant formulas is shown in a table and compared with values for fatty acids in human milk, as reported in the literature. Unsaturated fatty acids in the formulas ranged from 20 to 83 percent of the total. Generally, the fatty acid composition was consistent with the types of ingredients used; those with corn or soy oil had the highest levels of unsaturated fat, and those with milk fat, the lowest; formulas of mixed composition fell in between.
