Numerous variables which affect labor time and must be considered before comparing interfacility staffing are listed. Several methods that will assist a manager in determining staffing needs are examined. One of the most common standards used is the number of meals produced per labor hour. Other guidelines come from agencies' recommendations, national surveys, counting actual working days, determining a sales per man hour conversion, or analyzing division of labor. Tables illustrate the principles set forth.
