Effect of Diphenylamine on Antioxidant Metabolites in Pear Cultivars

The present investigation was carried out in the Department of Horticulture, Punjab Agricultural University, Ludhiana to study the effect of diphenylamine on antioxidant metabolites of different pear cultivars (Punjab Beauty, YaLi and Patharnakh). Pear fruits were treated with diphenylamine (DPA) in the concentration range of 500–1500 ppm after harvest. The fruits were stored in cold storage at 1–3°C temperature with 90–95% relative humidity (RH) for storage interval of 30, 45 and 60 days for YaLi, 45, 60 and 75 days for Punjab Beauty and 45, 60, 75 and 90 days for Patharnakh. After every storage interval, fruits were subjected to antioxidants analysis. There was a gradual decrease in ascorbic acid and phenolic contents, whereas an increase in malondialdehyde content occurred with advancement of storage time. The fruits treated with higher concentration of DPA maintained higher level of phenols during storage. However malondialdehyde contents decreased with increased DPA concentration. As far as the ascorbic acid content was concerned, it was found to be higher with DPA (1000 ppm) concentration in Punjab Beauty and YaLi but in Patharnakh pear cultivar, 500 ppm concentration of DPA maintained highest level of ascorbic acid content.
