Irrigation of peanut with saline water affected their quality. In general, nitrogen and protein content decreased, free amino acids and sucrose content increased and the amount of starch remained more or less constant. This response was time dependent, suggesting the existence of critical growth stages. Some of the deleterious effects of salinity could be alleviated by the application of gypsum.
