Perceived palatability of the prudent diet: Results of a dietary demonstration for physicians

A study assessed whether a dietary demonstration (i.e., "product sampling") at a continuing medical education conference could influence physicians' perceptions of the American Heart Association "prudent diet" which recommends: 30-35% total fat; below 10% saturated fat; below 3 g sodium; and increased dietary fiber. The effect of the demonstration (with the prudent diet as the free sample) was evaluated with pre- and post-demonstration questionnaires and a 20% random sampling of the participants 1 year later. Of the physicians participating, 62% reported the prudent diet as better than expected, 82% reported they would recommend the diet to their patients, and only 5% reported an unfavorable response. After 1 year, 60% considered the diet very palatable, and 55% reported the demonstration had stimulated them to increase their dietary intervention activities. (wz)
