Effects of salts, sugars, and salt-sugar combinations on growth and sporulation of an isolate of Eurotium rubrum from pancake syrup

An osmoduric-saccharophilic fungus isolated from a bottle of syrup showed optimum growth on Sabouraud's agar amended with 60% (m/v) sucrose and still grew near optimally at 110%. On arabinose, glucose, and pructose optimum growth occurred at 40%; glucose supported growth better than fructose or arabinose. When glycerol was present, optimum growth occured at 10% (v/w) concentration; no growth occurred above 35%. Inorganic salt concentrations above 30% produced no growth; generally, growth was better with 12-C76-C75-C73-C compounds. Growth was best with 10% KCL, 5% NaCl, and 10% CaCl2. There was essentially no growth when either organic or inorganic salts were not present. When sucrose and KCL or NaCl were added together, growth was greater than on salts alone. These data indicate the fungus requires, and tolerates, high solute concentrations except at equal osmotic pressures and water activity.
