Zinc content of meals served in the cafeteria of the Universite de Montreal

Extract: The amount of zinc in the three main meals, selected by students in the Cafeteria of the Universite de Montreal, was analyzed over a period of three weeks. The average zinc content of these meals amounted to 11.57 mg per day. This was higher than the amount recommended by Health and Welfare Canada, but lower than the zinc content generally attributed to the Canadian diet and the amount recommended by the United States Food and Nutrition Board. Most of the zinc available to students was concentrated in the two meals, lunch and supper. Meals selected by female students contained less zinc than those selected by male students.
