Three case studies in which sensory evaluation methods played a critical role in the determination of a product's future in the marketplace are presented. These cases demonstrate how failure to fully consider the sensory implications could lead to a wrong and costly conclusion. The three cases involve: choosing the appropriate target, choosing the appropriate control, and choosing the appropriate technique. A graph shows consumer texture profiles for whipped topping (Case 1) and a table details the number of judge-hours required in Case 3.
