Catechins of green tea: antioxidant activity

Green tea contains about 30% polyphenyls and the most important are the flavanols or tea catechins. Among these substances the Epigallocatechingallate (EGCG) which represents 50-60% of the total catechins seem to play an outstanding role in the antioxidant activity. Our preliminary analytical findings show that the content of the EGCG.
