Development and sensory evaluation of a high-protein, vitamin-fortified fruit roll-up for children with cystic fibrosis

Cystic fibrosis (CF) is the most common genetic disease in the United States. The high protein, vitamin-fortified fruit roll-up was developed to help children with cystic fibrosis by providing a children's snack that is tailored to meet their special nutritional needs. Benefits of the fruit roll-up are that it contains soy protein and fat-soluble vitamins (A, D, E, and K). In addition, it may reduce the number of pills taken daily, thereby facilitating psychological ease for the children and families of children with CF. The fruit roll-up was developed over a two year time period. During that time several challenges were overcome, including finding the upper limit of soy protein isolate that could be successfully incorporated into the formulation. The high protein, vitamin-fortified fruit roll-up was evaluated based on its sensory qualities (appearance, taste, texture, smell, and overall quality) by CF patients at Hershey Medical Center. A nine-point hedonic scale was used for evaluation. Children in the study generally accepted the fruit roll-up.
