Although not of the protein quality originally expected, this review article indicates that the winged bean is a nutritionally useful product in its indigenous areas. Tested in Sri Lanka by a group from the London School of Hygiene and Tropical Medicine, the protein content was found to be only twice that of potatoes. Discussions of cooking times/techniques, consumer acceptance, and growing/labor considerations conclude that this bean is no nutritional panacea for developing nations, but its use should not be discouraged.(jd-b)
