In Part I of the present communication, a mathematical model incorporating cellular membrane characteristics along with other structural and biophysical features was proposed for the description of water and solute fluxes in complex cellular structures of plant storage tissues subjected to osmotic dehydration. This second part gives the results of comparative studies performed to validate the model. In addition the influence of various cell and tissue properties on the kinetics of mass transport occurring in discs of beet roots and potato tubers is presented. The simulations confirm that the cell membrane represents the major resistance to mass transfer in such systems.
