Aspects of the biosynthesis of vitamin A, its stability in food (during processing and cooking), provitamin A derivatives, vitamin A absorption and utilization, the variety of analytical methods for provitamin A carotenes (principally, high-performance liquid chromatography), and intervention strategies for vitamin A, are reviewed and discussed. Results also are presented on a study of the provitamin A content of foods in southeast Asia, showing that a small "vitamin A garden" could provide sufficient nutrient-high vegetables to make a significant nutritional contribution to diets of a small family. Elements of an intervention program to assist 74 countries deemed "at risk" are identified. (wz)
