Trace minerals play an important role in human health and nutrition. Chromium helps regulate insulin, which in turn controls blood sugar. Chromium deficiency may result in decreased growth rtes and severe sugar intolerance in diabetics. Sources of chromium are Brewer's yeast, corn oil, clams, whole grain cereals, meat and some fruits and vegetables. Copper assists in the absorption of iron, protein metabolism, wound healing and protection of nerve fibers. Deficiencies are rare but can cause mental and growth retardation, hypochromic anemia and neutripenia. Green leafy vegetables, legumes, whole grains and almonds are good sources of copper. Manganese triggers enzyme reactions. Human deficiencies have not been established but animal experiments have shown deficiency-related defects. Sources of manganese include whole grains, egg yolks and green vegetables. Selenium and vitamin E work to promote body growth and fertility. Deficiencies are not observed in humans and excessive amounts can be toxic. Fish, kidney and liver are rich sources of these minerals. Zinc is important in the metabolism of protein, fats, and carbohydrates plus many other functions. Seven causes of zinc deficiency are listed. Deficiences can cause retardation of growth and sexual development, poor appetite, mental lethargy, delayed wound healing, loss of taste and other problems. High protein foods are the best sources for zinc. (kbc)
