Nutrition messages in elementary school textbooks

Nutrition messages in school textbooks were analyzed to determine the nature and content of the message. Students in elementary grades develop food attitudes at an early age. As the messages were evaluated for nutrition content they were also evaluated for race and sex biases, and stereotyping. The results are displayed in 2 tables. The defining of a food as nutritious or non-nutritious is explained. The findings indicate that the use of food references is widespread in elementary school textbooks and few of the foods would be called nutritious. Textbook authors should be sensitized to the need for a consistent nutrition message and textbook publishers encouraged to make modifications that would support nutritious messages which can influence a child's behavior. Parents can also use their forces to encourage the use of nutritious messages. (kbc)
