Digestibility of boiled and oven-dried cassava in infants and small children

A dietary study revealed that boiled fresh cassava or oven-dried cassava flour provided about half of the energy and less than 10% of the protein for malnourished infant patients. The addition of casein provided 8% of the energy intake as protein, and the addition of a soybean-cottonseed oil mix provided 20% of the energy intake as fat. Fecal analysis indicated that the feces had a high wet weight, but low dry weight and energy, nitrogen, and fat contents. It is concluded that the use of cassava in infant weaning diets does not adversely affect the digestion of dietary protein and fat, and provides a useful source of energy intake. However, the results indicate that, for cassava to be used effectively and safely, its potential hydrocyanic acid content must be removed and a quality protein supplement must be used regularly.(wz)
