Recommendations that zinc be added to textured vegetable protein (TVP) are based on the fact that the zinc content of TVP is lower than that of the meat it may replace, and that the phytate content of TVP renders the zinc less available. Results of several investigations have suggested possible zinc deficiencies in some segments of the population, based on the high phytate/zinc ratio of TVP. The studies have not considered the effects of calcium or other nutrients on zinc absorption; as the calcium content of the diet is reduced, the phytate/zinc ratio increases. Addition of zinc to TVP seems premature until further research is conducted. (cj)
