Influence of yeast races on the formation of aromatic and organoleptic properties of young wheat beer | Влияние дрожжей на формирование ароматического состава и органолептических свойств молодого пшеничного пива

At present, the Russian consumer has become more demanding on the beer quality; therefore, it is important to study the influence of yeast races on the formation of the aromatic composition and organoleptic properties of young wheat beer. Beer samples were obtained by fermenting laboratory-produced brewing wort with strains of Mangrove Jack's yeast (Liberty Bell Ale M36, Mangrove Jack's M54) and Wheat (Wheat W43); the fermentation activator Yeast Vit was added or not added in different experiment variants. The dynamics of the fermentation of beer wheat wort by different races of yeast was studied, and the influence of the activator on the fermentation process was determined. The physicochemical parameters of young beer were established according to the State Standard GOST 31711–2012. The composition of the readily volatile components of the samples was studied and an organoleptic evaluation was carried out. It has been found that the use of the Yeast Vit fermentation activator during the fermentation of wheat brewing wort contributes to a uniform fermentation process, and stimulates the formation of phenylethanol that is a typical compound of wheat beer. Due to the fermentation with the Mangrove Jack's of the M54 yeast race the formation of beer aromatic components, in particular, esters, enhances, and the organoleptic characteristics specific for wheat beer develop better.

В настоящее время российский потребитель стал более требовательным к качеству пива, поэтому важно изучить влияние рас дрожжей на формирование ароматического состава и органолептических свойств молодого пшеничного пива. Образцы пива получали путем сбраживания полученного в лабораторных условиях пивоваренного сусла на расах дрожжей компании Mangrove Jack's (Liberty Bell Ale M36, Mangrove Jack's M54) и Wheat (Wheat W43); в части вариантов добавляли активатор брожения Yeast Vit. Изучена динамика сбраживания пивного пшеничного сусла различными расами дрожжей и определено влияние активатора на процесс сбраживания. Установлены физико-химические показатели молодого пива по ГОСТ 31711–2012. Исследован состав легколетучих компонентов образцов и проведена органолептическая оценка. Выявлено, что применение активатора брожения Yeast Vit при сбраживании пшеничного пивоваренного сусла способствует равномерному протеканию процесса брожения, и стимулирует образование типичного для пшеничного пива фенилэтанола. Благодаря сбраживанию дрожжами Mangrove Jack's расы M54 усиливается образование ароматических компонентов, в частности сложных эфиров, и лучше развиваются органолептические показатели, характерные для пшеничного пива.
