Development and transfer of a Decision Support Tool applied to the ripening of red and white grape berries | Matubaies -Développement et transfert d'un Outil d'Aide à la Décision appliqué à la maturation des baies de raisins rouges et blancs

Based on the partnership established (IFV, ESA, INRAE, InterLoire, SICAREX Beaujolais), it has been possible to strengthen the maturation model of the grape berries of the Cabernet Franc grape variety and more particularly by increasing the learning base by adding the data acquired on previous vintages and new vintages, since the creation of the model. The latter is used by the wines of Val de Loire Interprofession (InterLoire) via an interface called PREVIMAT. The transposition of the model to the Gamay grape variety was possible and the Model GRIP (Grape Ripening Prediction) was successfully used by the technicians of the Beaujolais without further development. Most efforts have been concentrated on the transposition of the existing model to a white grape variety, the Chenin. It was possible to transpose it for the classic criteria: sugars and total acidity, and malic acid but a whole work was invested on indicators related to aromas, major components for whites, and, in particular, grape berry tastings and aromatic analyses. Unfortunately, it was not possible, in the time allowed, to propose a model on the maturation of the berries of Chenin grapes.

A partir du partenariat établi entre l’Institut Français de la Vigne et du Vin (IFV), l’Ecole Supérieure d’Agriculture d’Angers (Groupe ESA), INRAE Versailles-Grignon, l’Interprofession des Vins du Val de Loire (InterLoire), la Société d'Intérêt Collectif Agricole de Recherches et d'Expérimentations (SICAREX Beaujolais), il a été possible de consolider le modèle de maturation des baies de raisins du cépage Cabernet Franc notamment en augmentant la base d’apprentissage, en ajoutant les données acquises sur des millésimes antérieurs et de nouveaux millésimes, depuis la création du modèle. Ce dernier est utilisé par l’Interprofession des Vins du Val de Loire via une interface nommée PREVIMAT. La transposition du modèle au cépage Gamay a été possible, et le Modèle GRIP (Grape Ripening Prediction) a pu être utilisé par les techniciens du Beaujolais sans qu’il n’y ait eu de développement ultérieur. Beaucoup d’efforts ont été concentrés sur la transposition du modèle existant à un cépage blanc, le Chenin. Il a été possible de le transposer sur les critères classiques : sucres et acidité totale, et acide malique mais tout un travail a été investi sur des indicateurs en lien avec les arômes, composants majeurs pour les blancs, au-travers notamment des dégustations de baies de raisins et des analyses aromatiques. Cependant, il n’a pas été possible, dans le temps imparti, de proposer un modèle sur la maturation des baies de raisins de Chenin.
