In the last decade, there has been an increase in the use of sprouted grains in animal feeds, as well as an increase in scientific activity dealing with their nutritional characteristics and phytochemical parameters. The article deals with biochemical changes during the germination process and effects on the composition of key substances degraded in the rumen, including macro- and micronutrients and bioactive compounds.
