Radicidation of agricultural products from biological factors of microbial and fungal nature | Радиационная стерилизация сельскохозяйственной продукции от биологических факторов микробной и грибковой природы

英语. Research aimed to determine the optimal gamma radiation doses required for agricultural product sterilization against microbial and/or fungal contamination. To achieve this goal, gamma-rays installation has been tested to sterilize some foods. Doses of 5.0, 7.5, 15.0, 22.5, 30.0, 45.0, 60.0, 75.0, 90 kGy were applied to decontaminate minced meat from microbes; doses of 7.5, 15.0, 20.0, 22.5, 25.0, 30.0, 35.0, 40.0, 45.0, 60 kGy - for grain sterilization from toxic fungi. The dose rate absorbed by the product in all variants was 0.594 Gy/s. When irradiating minced meat infected with E. coli strain KV-1 and strain PL-6, complete absence of microbial growth was observed at a gamma irradiation dose of 20 kGy, with spores of Cl. perfringens strain No. 28 (type A) – at a dose of 25 kGy, with one-day culture (vegetative form) Cl. perfringens strain No. 28 (type A) – 15 kGy. Complete sterilization of grain infected with toxigenic fungi Aspergillus flavus occurred at a dose of 45 kGy, Aspergillus – 35 kGy, Fusarium sporotrichiella – 22.5 kGy, Helminthosporium – 20 kGy, Alternaria alternata – 15 kGy. Meat irradiated at a dose of 25 kGy, in terms of organoleptic, physicochemical, bacteriological indicators, as well as biological value (based on the results of daily feeding to rat pups), complied with the requirements of the state standards of the Russian Federation, the rules of health check of slaughter animals and veterinary and sanitary examination of meat and meat products to a good quality product. The study of the general toxicity and biological full value of grain based on the results of daily feeding to rat pups indicated the non-toxicity and high biological value of grain irradiated at doses of 25, 35 kGy and the toxicity of ones irradiated at a dose of 45 kGy.

俄语. Цель исследований - определение оптимальных доз гамма-излучения, необходимых для стерилизации с.-х. продукции от биологических факторов микробной и грибковой природы. Для достижения поставленной цели на гамма-установке "Исследователь" для стерилизации мясного фарша от микробов испытывали дозы 5,0; 7,5; 15,0; 22,5; 30,0; 45,0; 60,0; 75,0; 90,0 кГр, для стерилизации зерна от токсических грибов – 7,5; 15,0; 20,0; 22,5; 25,0; 30,0; 35,0; 40,0; 45,0; 60,0 кГр. Мощность дозы, поглощенной продукцией, во всех вариантах составляла 0,594 Гр/с. При облучении мясного фарша, зараженного E. coli штамма КВ-1 и штамма ПЛ-6, полное отсутствие роста микроба отмечали при дозе гамма-облучения 20 кГр, спорами Cl. perfringens штамма № 28 (тип А) – дозе 25 кГр, односуточной культурой (вегетативная форма) Cl. perfringens штамма № 28 (тип А) – 15 кГр. Полная стерилизация зерна, зараженного токсигенными грибами Aspergillus flavus, наступала при дозе 45,0 кГр, Aspergillus – 35,0 кГр, Fusarium sporotrichiella – 22,5 кГр, Helminthosporium – 20,0 кГр, Alternaria alternatа – 15,0 кГр. Мясо, облученное в дозе 25 кГр, по органолептическим, физико-химическим, бактериологическим показателям, а также по биологической полноценности (по результатам ежедневного скармливания крысятам) соответствовало требованиям государственных стандартов Российской Федерации, правил ветеринарного осмотра убойных животных и ветеринарно-санитарной экспертизы мяса и мясных продуктов к доброкачественному продукту. Изучение общей токсичности и биологической полноценности зерна (по результатам ежедневного скармливания крысятам) свидетельствовало о нетоксичности и биологической полноценности зерна, облученного в дозах 25, 35 кГр и токсичности облученного дозе в 45 кГр.
