Características físicas e químicas e potencial antioxidante dos frutos de 15 cultivares de bananeiras | Physical and chemical characteristics and antioxidant potential of the fruits of 15 banana cultivars

A banana está distribuída em várias regiões tropicais, constituindo uma das frutas mais consumidas no Brasil e no mundo por indivíduos de todas as classes sociais, em razão de suas características sensoriais atrativas. Possui grande importância econômica nos países tropicais pelo fornecimento de carotenoides, vitaminas, minerais e carboidratos, além de ser muito apreciada pelo sabor, apresentar facilidade de consumo, ser de baixo custo e possuir potencial como alimento funcional e nutracêutico. Objetivou-se caracterizar os aspectos físicos e químicos, o potencial antioxidante e os compostos fenólicos na polpa e na casca verde e madura dos frutos de 15 cultivares de bananeiras colhidos em Viçosa, Minas Gerais. Foram avaliados os seguintes cultivares: Ouro, Nanica, Nanicão, Caru-Verde, Caru-Roxa, Caipira, Prata, Prata-Anã, Maçã, Mysore, Pacovan, Terrinha, Marmelo, Prata-Graúda e Caju. Foram colhidos quatro cachos por cultivar, na fase pré-climatérica (casca do fruto verde), sendo utilizados seis frutos por unidade amostral. Os frutos foram analisados na fase pré-climatérica e após o amadurecimento (casca do fruto completamente amarela). Determinaram-se o diâmetro, o comprimento total e comercial, a firmeza da polpa, a massa fresca do fruto, da polpa e da casca, a espessura da casca, a relação polpa/casca, a porcentagem de matéria seca da polpa e da casca, os parâmetros de cor da polpa e da casca, o teor de sólidos solúveis, a acidez titulável, os teores de açúcares solúveis totais, redutores e não redutores, de amido e de compostos fenólicos totais, o potencial antioxidante, a ocorrência e o teor de luteína, α-caroteno, β-caroteno, β-criptoxantina e licopeno, os teores de carotenoides totais e de vitamina C e os teores de N, P, K, Ca, Mg, Cu, Mn, Fe, Zn e Se. Também, foram avaliadas cinco plantas de cada cultivar quanto a altura e diâmetro do pseudocaule, o comprimento do pecíolo e do limbo, a largura do limbo e a relação comprimento/largura do limbo. O cultivar, bem como o estádio de maturação, influenciou todas as características avaliadas na polpa e na casca, com exceção do comprimento total e comercial e do teor de macro e micronutrientes, que não variou com o amadurecimento dos frutos. O cultivar Ouro apresentou os frutos com menor diâmetro, comprimento total e comercial e massa fresca nos dois estádios, além da polpa mais firme quando verde. A ‘Caru-Roxa’ apresentou maior massa fresca dos frutos e da polpa e a ‘Terrinha’, a maior porcentagem de matéria seca na polpa verde e madura. A maior relação polpa/casca na polpa verde é da ‘Maçã’ e da ‘Ouro’. Houve redução da massa fresca e da espessura da casca e acréscimo da matéria seca da casca madura em relação à casca verde. A casca da ‘Marmelo’ apresentou a maior massa fresca nos dois estádios. A ‘Marmelo’ e ‘Maçã’ exibiram maior porcentagem de matéria seca em ambos os estádios de maturação. A polpa verde apresentou baixo teor de sólidos solúveis, com média geral cerca de cinco vezes inferior à da polpa madura. Para a acidez titulável, houve acréscimo considerável na polpa madura, em relação à verde. A altura média das plantas variou de 2,25 a 6,15 m, com a ‘Nanica’ apresentando o menor porte, enquanto ‘Prata’, ‘Pacovan’, Caru-Roxa’ e ‘Caru- Verde’ foram os cultivares de porte maior. Os cultivares com maior diâmetro do pseudocaule são também os mais altos, com exceção da ‘Prata-Anã’ e ‘Prata- Graúda’, que se destacam no grupo com maiores diâmetros. A polpa e a casca verdes apresentam pequena porcentagem de açúcares, porém alta porcentagem de amido, com destaque para a ‘Terrinha’ e ‘Marmelo’. Os cultivares dos grupos genômicos AAB e ABB apresentam maior porcentagem de amido em comparação com os cultivares dos grupos AA e AAA. Houve aumento significativo na porcentagem de açúcares na casca e na polpa, com a maturação dos frutos. Os cultivares Terrinha e Marmelo exibiram ampla predominância de açúcares redutores, em relação aos açúcares não redutores, na polpa madura. Para os compostos fenólicos totais, o maior teor foi observado na casca madura, seguida pela polpa madura e casca e polpa verdes, com destaque para a ‘Terrinha’, em todas as partes e estádios de maturação avaliados. O potencial antioxidante foi maior na casca madura, seguida pela casca verde e polpa madura e verde. Além disso, a casca madura teve potencial antioxidante três vezes maior que o da polpa verde. Na polpa verde a ‘Ouro’ se destacou com alto teor de luteína em relação aos demais cultivares. Quanto aos teores de α-caroteno e de β-caroteno, a ‘Terrinha’ destacou-se com teor expressivo. Na polpa madura, houve acréscimo de 36% no teor médio de luteína em relação à polpa verde e redução de 7,3 e 8,5% nos teores médios de α-caroteno e de β- caroteno, respectivamente. Na casca verde, verificou-se ampla predominância da luteína diante dos outros carotenoides, com a ‘Terrinha’ se destacando com teores de α-caroteno e β-caroteno superiores aos dos demais cultivares. Na casca madura, o teor de luteína praticamente não se alterou, no entanto houve discreta redução nos teores de α-caroteno e β-caroteno, com o amadurecimento dos frutos. A ‘Ouro’ e a ‘Caju’ são os cultivares com maior teor de luteína na casca madura, e a ‘Terrinha’ destacou-se com os maiores teores de α-caroteno e β-caroteno, mais a ‘Ouro’, que também se destacou quanto ao teor de β-caroteno. No tocante a vitamina C, o teor médio foi ligeiramente maior na polpa verde em relação à polpa madura, com algumas exceções; já para a casca o teor médio foi semelhante nos dois estádios de maturação. Além disso, o teor médio na casca é ligeiramente superior ao da polpa, em ambos os estádios. Na polpa verde, a ‘Caipira’ e a ‘Mysore’ se destacaram com o maior teor de vitamina C, com acréscimo da ‘Ouro’ na polpa madura. Na casca, houve pouca variação entre os cultivares. O cultivar Terrinha apresentou a maior porcentagem de matéria seca na polpa e os cultivares Marmelo e Maçã, na casca. Para N, P, Fe, Zn e Cu, a casca apresentou duas vezes o teor da polpa. O teor de K e Mn na casca foi aproximadamente quatro vezes o da polpa. A polpa do cultivar Caipira e a casca dos cultivares Prata e Pacovan apresentaram os maiores teores de minerais.

The banana is distributed in several tropical regions, being one of the most consumed fruits in Brazil and in the world by people of all social classes, because of its attractive sensory characteristics. It has great economic importance in tropical countries due to the supply of carotenoids, vitamins, minerals and carbohydrates, and it is much appreciated by the taste, it is easy to eat, it has low cost and has potential use as functional and nutraceutical food. This study aimed to characterize the physical and chemical aspects, the antioxidant potential and phenolic compounds in the pulp and peel of unripe and ripe fruit of 15 banana cultivars harvested in Viçosa, Minas Gerais. We evaluated the following cultivars: Ouro, Nanica, Nanicão, Caru- Verde, Caru-Roxa, Caipira, Prata, Prata-Anã, Maçã, Mysore, Pacovan, Terrinha, Marmelo, Prata-Graúda and Caju. Four bunches by cultivar were harvested, in the pre-climacteric stage (peel color green), using six fruits by sample unit. The fruits were analyzed in the pre-climacteric stage and after ripening (peel color completely yellow). It was determined: the diameter, the total and commercial length, the firmness of the pulp, the fresh weight of the fruit, pulp and peel, the peel thickness, the pulp/peel ratio, the percentage of dry matter of the pulp and peel, the color parameters of pulp and peel, the soluble solids content, the titratable acidity, the content of total , reducing and non-reducing soluble sugars, starch and total phenolic compounds, the antioxidant potential, the occurrence and content of lutein, α- carotene, β-carotene, β-cryptoxanthin and lycopene, the content of total carotenoid and vitamin C and the content of N, P, K, Ca, Mg, Cu, Mn, Fe, Zn and Se. Also, five plants of each cultivar were evaluated as for the pseudostem height and diameter, length of the petiole and leaf blade, the width of the leaf blade and the length/width ratio of the leaf blade. The cultivar and the color stage influenced all the characteristics evaluated in the pulp and peel, except for total and commercial length and content of macro and micronutrients, which did not vary with the ripening of the fruits. The cultivar Ouro presented the fruits with smaller diameter, total and commercial length and fresh weight in the two stages, besides the most firm pulp when unripe. The ‘Caru-Roxa’ presented higher fresh weight of fruit and pulp and the ‘Terrinha’ the highest percentage of dry matter in the unripe and ripe pulp. The greatest pulp/peel ratio in the unripe pulp was observed in the ‘Maçã’ and ‘Ouro’. There was a reduction of fresh weight and peel thickness and an increase in dry matter of the ripe peel when compared to the unripe peel. The peel of ‘Marmelo’ had the highest fresh weight in both stages. The ‘Marmelo’ and ‘Maçã’ had higher percentages of dry matter in both ripening stages. The unripe pulp showed low soluble solids content, averaging about five times lower than in ripe pulp. As for titratable acidity, there was a considerable increase in the ripe pulp when compared to the unripe pulp. The average plant height ranged from 2.25 to 6.15 m, with ‘Nanica’ presenting the lowest height, while ‘Prata’, ‘Pacovan’, ‘Caru-Roxa’ and ‘Caru-Verde’ were the heighest cultivars. The cultivars with larger pseudostem diameter are also the highest, except for the ‘Prata-Anã’ and ‘Prata-Graúda’, which stand out in the group with larger diameters. The unripe pulp and peel have low percentage of sugar, but high percentage of starch, especially ‘Terrinha’ and ‘Marmelo’. The cultivars of the genomic groups AAB and ABB have reported higher percentages of starch when compared to the cultivars of the groups AA and AAA. There was a significant increase in the percentage of sugar in the peel and pulp with the ripening of fruits. Terrinha and Marmelo cultivars showed wide predominance of reducing sugars in relation to non-reducing sugars in ripe pulp. For the total phenolic compounds, the highest content was observed in ripe peel, followed by ripe pulp and unripe peel and pulp, highlighting the ‘Terrinha’, in all the evaluated parts and ripening stages. The antioxidant potential was higher in ripe peel, followed by unripe peel and ripe and unripe pulp. In addition, the ripe peel had antioxidant potential three times higher than the one of unripe pulp. The ‘Ouro’ stood out with high lutein content in relation to the other cultivars. As for the levels of α-carotene and β- carotene, ‘Terrinha’ stood out with expressive content. At the ripe pulp, there was a 36% increase in the average of lutein content when compared to the unripe pulp and reduction of 7.3 and 8.5% in average levels of α-carotene and β-carotene, respectively. In unripe peel, there was wide predominance of lutein when compared to the other carotenoids, with ‘Terrinha’ standing out with α-carotene and β-carotene contents higher than the other cultivars. In ripe peel, the lutein content almost did not change, however there was a slight reduction in the levels of α-carotene and β- carotene, with the ripening of fruits. The ‘Ouro’ and ‘Caju’ are the cultivars with higher lutein content in the ripe peel, and the ‘Terrinha’ stood out with the highest levels of α-carotene and β-carotene, and the ‘Ouro’, which also stood out for β- carotene content. Regarding vitamin C, the average content was slightly higher in the unripe pulp in relation to ripe pulp, with some exceptions; as for the peel the average content was similar in both ripening stages. Furthermore, the average content in the peel was slightly higher than the pulp in both stages. In unripe pulp, the ‘Caipira’ and ‘Mysore’ stood out with the highest contents of vitamin C, increase with the ‘Ouro’ at the ripe pulp. In the peel, there was little variation between cultivars. The cultivar Terrinha had the highest percentage of dry matter in the pulp and the cultivars Marmelo and Maçã in the peel. For N, P, Fe, Zn and Cu, the peel showed twice the level of the pulp. The content of K and Mn in the peel was about four times the one of the pulp. The pulp of the cultivar Caipira and the peel of cultivars Prata and Pacovan showed the highest mineral content.
