The diversity of natural vegetation and the influence of irrigation in the present species were low. The most plant species were annuals. Significant differences on the vegetative growth between treatments were not found. Nevertheless, the number of fruits was significantly lower in rain-fed conditions. This result demonstrated that water stress could significantly reduce the number of flowers by inflorescence, the fruit set or the canopy area. Consequently, because of the less competition of fruits, it had higher weight, oil yield and its ripeness was more precocious. However, the yield was significantly higher in the irrigation treatment due to the higher number of fruits. The irrigation had no influence on the chemical characteristics of olive oil. However, sensory olive oils from rain-fed conditions treatment were more fruity, bitter and spicy. Even so, any treatment had negative impact on the commercial value of produced oils, both classified as „„extra virgin‟‟.
