显示更多 [+] 显示较少 [-]The levels of pumpkin losses detected in storage are high and a matter of concern. Therefore, it is important to analize and diagnose the way the storage takes place, so that it becomes possible to provide solutions and recommendations in order to minimize these losses. To achieve this, a series of laboratorial tests were made. The analysed storage warehouses have different types of structure. None of them has any kind of temperature or atmosphere control, except for some control of the air flow. Pumpkins were stored in cold for 20 days at 5º C, from which samples were taken at days 0, 1, 4, 8, 10, 15 and 20 after the first day of storage. Samples were taken in three replicas, each with 15 disks. The samples were then analized, measuring firmness, total soluble solids, titratable acidity and pH. A condutivity test was also made in order to determine the electrolyte efflux. Firmness declined, which is a result of ripeness and structural changes in the membrane. Measurements of soluble solids content as well as titratable acidity tests yield values that decrease with time and follow the ripening process. Regarding the electrolyte eflux kinetics, a slight increase of ion release was observed that is associated with with both structural and functional decay of the membrane. The performed tests confirm once again that exposure to cold is injurial to pumpkin storage, since the membrane shows signs of cold induced damages.
