显示更多 [+] 显示较少 [-]Coffee silverskin (CS) is a thin tegument of the outer layer of the coffee bean and it is the only by‐product of the roasting process. CS and its derivatives are a source of bioactive compounds, such as chlorogenic acid (CGA), caffeine, melanoidins, and dietary fiber, among others, with putative health benefits. To date, the health‐promoting properties of CS are mainly attributed to its powerful antioxidant character. It also presents anti‐inflammatory effects, although few reports have been published. In addition, this coffee by‐product shows potential beneficial effects on the gastrointestinal health as a prebiotic and source of dietary fiber. The health‐promoting properties associated with dietary fiber are intestinal regulation, increased satiety, and slimming. The in vitro antidiabetic effect of CS has been initially associated with its capacity to inhibit α‐glucosidase and lipase activities, which is related to metabolic disorders such as obesity and diabetes. Other beneficial effects of CS have been described on skin health. The aim of this chapter is to review the use of CS as a functional food ingredient for preventing metabolic disorders and improving gastrointestinal and skin health; the data presented here support the valorization of CS to achieve a sustainable health.
