Results of studies are presented examining factors influencing accumulation of steroidal glycoalkaloids (SGA) in potatoes, including influence of mechanical stress, light, variety (Astarte and Kuras), peeling, peel colour and storage. Ratio of alpha-chaconin to alpha-solanin was also studied Findings indicated that SGA accumulation could be avoided by careful handling to reduce mechanical stress, protection from light and peeling prior to consumption. From a toxicological perspective, alpha-chaconin tended to be present at higher concn. than alpha-solanin.
