The aim of the research is to analyze current innovative non-thermal processing technologies of tomato paste processing, to characterize their effectiveness in ensuring the quality and shelf life of tomato paste, aspects of technology sustainability and new trends, using advanced technologies. The biologically perfect and ecologically safe tomato paste without emulsifiers was developed. which, given the tomato crop productivity and its content of important mineral and biochemical compounds, will play a major role in the production of wholesome food products.
